Creamy Artichoke and Goat Cheese Dip

This one of my FAVorite Dips to make that is gluten and dairy free and delicious for all!! Enjoy.

Total Time: 5 minutes

Serves: 2-4

Ingredients:

  • 1 can artichoke hearts, drained

  • 1 lb chevre goat cheese

  • 2 tbsp olive oil

  • 2 tsp lemon juice

  • 1 garlic clove, minced

  • 1/2 cup pecorino, grated

  • 1 tbsp parsley

  • 1 tbsp chives

  • 1/2 tbsp basil

  • Sea salt and black pepper to taste

  • Dash of cayenne pepper

Directions:

  1. In a food processor, mix all ingredients except pecorino until well incorporated and creamy

  2. Top with freshly grated pecorino

This amazing plant is loaded with antioxidants — in fact, they’re one of my top 10 antioxidants foods — helping to eliminate cancer-causing free radicals. They’re also high in fiber and help reduce cholesterol levels. Artichoke leaf extracts can help increase “good” cholesterol while decreasing the bad.

Even with all these proven benefits, many people haven’t quite figured out how to incorporate artichokes into their diet. Their funny-looking appearance can be intimidating and uninspiring recipes like steaming them might not be enough to convince you how tasty artichokes truly can be.

But my goat cheese and artichoke dip recipe just might convince you to sneak more artichokes into your diet. Perfect as a game-day dip or a mid-day snack, this artichoke dip recipe is sure to turn you into an artichoke fan. Using the freshest ingredients for this dip will really make the flavors pop. So let’s get started!

Kick off this artichoke dip recipe by tossing a can of drained artichoke hearts into a food processor. Then add in lemon juice — two tablespoons is perfect.

Add a dash of sea salt and black pepper to your liking; start on the lighter side, as you can always add more later to taste. If you’re craving a little heat, sprinkling a bit of cayenne pepper will do the trick.

Toss in a heaping pound of chevre goat cheese, one of my favorites, and then add three more ingredients: olive oil, minced garlic, and chives. The olive oil will keep the artichoke dip smooth while the garlic and chives will add extra zest.

Blend it all up until all the ingredients are well incorporated — we don’t want any chunky artichoke hearts here! ­— and creamy. Then top it all off with a healthy dose of freshly grated pecorino cheese, the perfect finishing touch.This entire artichoke dip recipe takes just 5 minutes from start to finish.

Dip chopped veggies in it, spread it on a sandwich, or just eat it with a spoon — it’s that good.
