Quick Turkey Meatballs You Can Take on the Go!

I made these last night and popped them into a baggie this morning to have for a yummy high protein snack!


  • Coconut Oil cooking spray

  • 1 pkg (20 oz each) lean ground turkey (93% lean)

  • 2 eggs ( or 3 egg whites)

  • 1/3 cup dry unseasoned bread crumbs (we use gluten free from bread crumbs from ezekial bread toasted)

  • 1 can (10 oz each) Organic Diced Tomatoes & Green Chilies, drained, liquid reserved (or fresh tomoto chopped with green chili even better!

  • 2 tablespoons (1/2 of 1.25-oz pkg) taco seasoning mix (prefer organic one at health food store)

  • 1/4 cup finely shredded tilamuk cheddar, almond jack cheese if dairy free option


  1. Preheat oven to 400°F. Spray 12 regular muffin cups with cooking spray.

  2. Mix turkey, Eggs , bread crumbs, drained tomatoes plus 1/4 cup reserved liquid and taco seasoning in medium bowl. Form into 12 balls (1/4 cup each) and place in muffin cups. Top each with 1 teaspoon cheese.

  3. Bake 18 to 20 minutes or until browned and cooked through (170)
